Cooking Up Love: Try This Chocolatey Delight for Valentine's Day!

I wanted to share a delightful make-ahead dessert recipe with you – a treat that's bound to steal the show, especially on Valentine's Day.

The Chocolatey Magic

We never hold back when it comes to chocolate. Well, this recipe takes it up a notch. It's all about going wild with the best quality chocolate you can find. Make sure your chocolate has a rich, indulgent flavor. The quality of chocolate truly elevates the entire dessert.

Farm Fresh Goodness

For this recipe, I insist on using farm-fresh eggs. The difference in taste and quality is simply undeniable. Incorporating ingredients from happy hens adds an extra layer of richness to the dessert. 

Chocolate Curls: Pièce de Résistance

And now, let's talk about the pièce de résistance – chocolate curls. Using a slab of high-quality chocolate is the secret. Grab your favorite chocolate bar, throw it in the refrigerator, and let it chill. 
 
Once firm, grab a peeler, shield one hand with a paper towel (let's keep it tidy), and start shaving along the narrow length of the bar. 
 
Trust me, these curls will take your dessert to the next level.

Pots De Creme
(adapted from Babs Costello)

Ingredients

2 cups heavy whipping cream (or cream from the top of your fresh milk)
7 ounces 70% cocoa or dark chocolate such as Olive and Sinclair
4 large Fiber Farm egg yolks room temperature
1/4 cup granulated sugar
1 teaspoon pure vanilla extract
whipped cream, raspberries, and shaved chocolate for serving

Directions

1. In a medium sauce pan, hit the cream over medium heat until bubbles form around the side of the pan and the cream is hot but not boiling. 
2. Remove from heat. Add the chocolate and whisk until well combined and the chocolate is melted.
3. In a separate medium bowl, whisk the egg yolks, sugar, and vanilla until well combined
4. Add a few tablespoons of the chocolate mixture to the egg mixture, whisking constantly. Add another few tablespoons, whisking constantly. Add the remaining chocolate mixture to the egg mixture, and continue whisking until well combined.
5. Pour the mixture evenly into 6 (4 ounce ramekins). Cover each ramekin with plastic wrap, pressing the wrap to the surface refrigerate for three hours or overnight until cold. So topped with whipped ice cream raspberries or shaved chocolate OR even all three!
